Bonsai Matcha Recipes

Every recipe below uses the same powders we serve at our café in Barcelona. Ceremonial grade matcha shines in simple preparations, so most of these take five minutes or less.

Classic Usucha (Traditional Whisked Matcha)

The purest way to taste matcha, and the preparation we recommend trying first with any new tin.

  1. Sift 1.5g (one heaped bamboo scoop) of matcha into a bowl
  2. Add 70ml of water at 70 to 75°C
  3. Whisk briskly in a W motion for 20 to 30 seconds until a fine foam forms
  4. Drink straight from the bowl while warm

Best with: ASAHI in the morning or KIYOSHI when you want maximum umami.

Matcha Latte (Hot)

  1. Sift 2g of matcha into a bowl or mug
  2. Whisk with 30ml of 75°C water into a smooth, thick base
  3. Add 150ml of warm milk. Oat milk pairs beautifully with the natural sweetness of ceremonial grade
  4. Sweeten only if you like: a little honey or maple syrup is plenty

Iced Matcha Latte

  1. Whisk 2g of matcha with 30ml of room-temperature water
  2. Fill a glass with ice and 150ml of cold milk
  3. Pour the matcha over the top and stir once for the layered look

Sparkling Matcha Lemonade

A café favourite in the Barcelona summer.

  1. Whisk 1.5g of matcha with 30ml of water
  2. Fill a glass with ice, the juice of half a lemon and a teaspoon of honey
  3. Top with 150ml of sparkling water, then pour in the matcha

Hojicha Latte

Roasted, naturally low in caffeine and toasty like a gentle cousin of coffee. Made exactly like a matcha latte, using hojicha powder instead. Wonderful in the evening.

Baking with Matcha

For cookies, cakes and ice cream, flavour has to survive heat and sugar, so use a generous dose: 1 to 2 tablespoons per batch. This is the one place where you can save your best tins and use the remainder of an older one. Sift the powder into the dry ingredients to avoid clumps.
